Easy Salad Recipes – Bibb Lettuce & Fennel
Salads are such an easy way to add veggies to a dinner meal, but the catch is sometimes they can be a little boring. And then there`s the time. We`re all busy so we want meal prep to be quick and easy, and of course, tasty.
My plan is for this to be the first of many easy salad recipes, and with this salad recipe, I used bibb lettuce instead of the typical mixed greens, but feel free to use any greens you like. A great addition would be to add 1/2 an avocado or tear up some kale or swiss chard and add that to the salad. They have powerful antioxidants that are great for eye health.
Until now, I had been avoiding fennel like the plague because honestly i`m not a fan of licorice. But I decided to give it a shot, (especially as i`m always telling my clients to try something new!) and to my surprise, the licorice flavor was quite mild! It actually really just added a `freshness`to the salad, which was wonderful. I think it may actually become a summer favorite…
Quick nutrition tip – did you know fennel is an excellent source of vitamin C and high in fibre and potassium, which means it may help reduce inflammation, lower cholesterol and improve blood pressure? I figure that`s a pretty good exchange for 5 minutes of slicing…
For dressing, I used Simply Natural’s Organic Creamy Caesar dressing, (80 calories in 2 tbsp which is fine) but choose a dressing of your choice. I used feta cheese but would suggest using Parmesan, for a little more flavor. Serve it with grilled or Barbeque chicken and enjoy!
Bibb Lettuce Salad with Fennel
This easy salad recipe is a nice alternative to a traditional salad.
recipe yield – 2-3 servings
Ingredients
- · 1 head bibb lettuce
- · 1 large fennel bulb, thinly sliced
- · 2-3 tbsp shredded Parmesan cheese
- · 2-3 tbsp creamy dressing or oil based vinaigrette
- · Pinch salt and pepper
Directions
Combine all ingredients in a large bowl, toss with dressing, and enjoy!
