Healthy Pancake Recipe – Oatmeal Pancakes With Sliced Pears

When I was 9 years old I had my first pancake at a place called Elkhorn Ranch in Manitoba.
I remember for breakfast, the restaurant made dollar pancakes, which just means that they were about half the size of the palm of my hand. They gave me 5 of these delicious dollar pancakes with each serving.
From that point on, I was hooked.
Did I care at 9 years old that they were made with refined white flour? Of course not!
But now I do.
I’ve been on the hunt for a healthy pancake recipe for a while now, but it moved to the top of my list when a client of mine specifically requested a recipe for her weekend family breakfasts.
I remembered my client Eren shared a great pancake recipe from Tosca Reno a while back, so I pulled it out and used it as a launch point to make my Oatmeal Pancakes With Sliced Pears.
They’re simple to make and delicious.
How can you work these pancakes into a balanced breakfast?
Have them with a side of protein and a non-fat latte. Yum!
Here I’ve added an egg, however a serving of lean back bacon works just as well (nitrate free of course!)
Oh, and feel free to add some maple syrup. But if the pears are ripe, they’ll be beautifully sweet, and you won’t need much.
